Fed up with other so called non stick pans
I have used Green Pans since the late 2010s. I have loved from the very beginning that they are forever chemical free. I purchased this set to replace 2 of the other so called non-stick skillets. Even with olive oil and butter in my skillet, my eggs stuck. While over easy or sunny side up eggs weren't too much of an issue, I love making omelets. You can imagine my frustration having prepared the fillings, scrambled the eggs to a frothy consistency, added the right amount of butter only to wind up with scrambled eggs and a skillet that had to be soaked to get stuck on egg off. With a scant teaspoon of butter, my eggs glide around the skillet, flip with ease and turn out onto the plate with the presentation of being cooked by a Master chef. Fish, normally will stick in the best non stick. I cooked a filet of halibut in the 10" skillet. A mear tablespoon of avocado oil. When you are paying $32 a pound, screwing up the fish from sticking is not an option. My filet came out beautifully golden, moist and flaky.

I received my Wok just this month and have used it a couple of times. First thing I made was broccoli beef, a favorite of mine and one of the major reasons I purchased a quality Wok. The sear on the flank steak was phenomenal. Beautiful Millard reaction with nice caramelization. The dish, while failed due to my own ignorance, was cooked to perfection. Then, I fixed a Creole Classic, Jambalaya. First off, the aromatics cooked in minutes. The tomatoes reduced nicely. The rice cooked correctly with the included lid and the shrimp cooked in minutes with the residual heat of the dish. Clean up in both uses was so easy. Some dish soap, hot water and a soft rag. The Wok came clean so easily. I have other Green Pan products and have used them for nearly 10 years now. The Spectra Series is by far the best I have ever used. I think the one feature that is my favorite is the fact the handle is welded instead of riveted. No buildup around the rivets. Completely smooth interior of the skillet. You will not be disappointed.
